Tasty summer salads and dressings

A nice salad is best enjoyed in the summer when the body is ready for some lighter food than during the colder months.
My favourite salads are those containing a lettuce of some kind. Salads don’t have to be boring and dressings don’t have to be high in calories.

You can also try using what is already in your fridge or cupboards rather than automatically buying everything new.
Small cubes of apples go well with Cheddar or Gouda cheese; corn with tomatoes; tinned tuna, anchovies or ripe avocadoes with hard boiled eggs and tomatoes; fresh grapefruit with potatoes salad.
To finish it off, add some grapes and/or grilled pine nuts, sunflower/ pumpkin seeds. If you have some handy also add some fresh parsley (put some in an old cup and chop it finely with kitchen scissors) as it is colourful but mainly highly nutritious.

Some ideas of salad dressings (all these can be done either by mixing by hand or using a food processor).

1) Honey Mustard

Mix 1 tbsp French mustard, 1 tbsp honey 1 clove garlic, peeled and crushed, 1 tsp balsamic vinegar, 2 tbsp cider vinegar. Add 6 tbsp sunflower oil whilst still mixing. Add salt and pepper, to taste.
If you want to use something that has less oil try this variation: Mix 2tsp Hot Chinese mustard with 2tsp Honey, 2 oz of Rice Wine Vinegar and 1 tsp of vegetable Oil. Add a pinch of salt and pepper.

2) Creamy Citrus Ginger*

Mix 1 tsp crushed garlic, 1 tsp ground ginger, 1 tsp sugar, 1 tsp ground pepper to 2oz Plain Yoghurt. Add 4 oz Orange Juice, 2 Tbsp lemon juice and 1 Tbsp of Vegetable Oil. Add a dash of salt

3) French Vinaigrette*

Mix 2 tsp Dijon mustard, 1 tsp crushed garlic, 1 tsp Sugar. Add 2oz Olive Oil, 4oz Red Wine Vinegar. Add some parsley and salt and pepper.

4) Italian Dressing*

Mix 3tsp dried basil, 3 tsp Ground Oregano, and 3 tsp Ground thyme. Add 3 Tbsp Olive oil and 6 oz Balsamic Vinegar. Add a dash of salt and pepper.


5) Thousand Island Dressing

This dressing is to eat with crisp cold Cauliflower (as a snack or “aperitif”) or for a Prawn Cocktail or to eat with an avocado.
Mix some tomato ketchup with some mayonnaise (egg not lemon one) to your liking. You can use home made mayonnaise or from a jar. If you have some plain yoghurt mix it in with the mayonnaise first; it will give it a softer taste and have fewer calories.

• These 3 dressings make up about 10oz which will be too much for a standard salad for 4. You can save the rest in a jug for the following day.
